There has been a lot going on in the Serenity Seitan test kitchen. The burger is getting closer! One thing is certain, this stuff takes time and lots of experimentation.
One thing we have experimented with in the burger is TVP, that's textured vegetable protein, or soy protein isolate. It gives the seitan burger a nice texture, and absorbs flavors really well. We thought we had found the cure for our burger blues. However, we wanted to make sure that what we gave customers was healthy, so we did our homework. What we found is that although TVP is a fairly good source of protein, and is often touted as a health food, it is highly processed. The processing steps include extracting the protein from the rest of the soybean components through a process called thermoplastic extrusion. So not natural, and not for Serenity Seitan customers. Next up on the testing block was bulgur wheat, or cracked wheat. A highly nutritious whole food. While the texture was nice, the taste wasn't as nice. We were left with the taste of bulgur wheat and not much else. Cross one more off the list. After more research and more testing, we arrived at the most recent prototype, which uses red kidney beans. Kidney beans are very nutritious, as they are high in fiber, molybdenum, folate, and magnesium. The good news is, it tastes pretty dang good too. The smoky flavor and seasonings really shine through. What we continue to be reminded of is that quality takes time, especially when you are not willing to compromise. We pledge to keep feeding you all natural, vegan seitan that you can feel good about eating. Stay tuned for the unveiling of Serenity Seitan Burgers!

Here in the Serenity Seitan kitchen, we have been busy this Chinese New Year making new and delicious recipes for you, our valued customers. While the fireworks explode night after night outside your bedroom window, our kitchen has been exploding with flavor as we work to bring you new ways to cook with our seitan. We are also excited about two new products that will be offered in the near future: Smoky Maple Seitan and Seitan Burgers. Two of my most favorite things are breakfast sandwiches and burgers. There are many delicious vegetarian sandwiches out there, but many leave my stomach growling for more. Seitan says "NO!" to hunger, and fills your mouth and appetite with goodness that lasts. It's been fun experimenting, and we can't wait to share the results with you.
Another piece of excitement is coming your way. Spread the Bagel will be offering two Serenity Seitan Bagelwiches soon! They are the Buffalo Seitan Sandwich made with a tangy buffalo sauce, blue cheese, lettuce, and tomato, and the French Dip made with slow cooked seitan topped with Swiss cheese, and served with a vegetarian au jus sauce for dipping.
