What is Seitan?
Seitan (pronounced say-tahn) is wheat based, and is very high in protein. It has been used in Asian cooking for over 1,000 years. It was first used by Buddhist monks, as they were searching for a satisfying source of protein to add to their vegetarian diets. Seitan recently became popular on a wider scale thanks to George Ohsawa, a leader in the macrobiotic movement.
