I am sorry that it took me so long to post an update! 

Thanks to our amazing supporters, we successfully reached our crowdfunding goals! We could not be happier or more thankful to all of you. 

Please check out our short video to see what we have been up to after the campaign! Still work to do but everyday is getting better, and we will continue to strive to bring our customers great tasting 100% plant based comfort foods.

I am so sorry I have been neglecting to post on our blog for so, so long! We have been posting most of our content on our WeChat Official Account, which is the one most widely read in our home of Shanghai. It's time to reconnect with our friends and family abroad so we can keep you updated on what we're up to!

And we've been up to a lot.

It was a hot and humid Shanghai Saturday. We wanted to stay inside with a nice spot directly under the air conditioning unit, but we did something a bit different (re: crazy) instead. We went to a sort of doggie heaven called OkayLand in Pudong. So, armed with 5 dogs, 6 people, and a bag full of quinoa treats, we headed out.
这周六上海特别燥热潮湿。所以我们全家都想呆在有空调的室内,但是呢,我们却做了一件有点不一样(或者说有点疯)的事情。我们去了浦东一家叫做OkayLand对宠物友好的泳池。所以,带上五条狗狗,六个大人以及一大包用藜麦做的美食,我们就出发啦。

One of my goals over the next six months is to get out there and enjoy some of the more unique outdoor options Shanghai has to offer. Of course, I also want to continue feeding people delicious vegetarian food, so every time we go on an excursion, I try to think of something great to share. Friends that go to bone shaped pools and eat good food together, stay together. I also want to share the experience with you, so here are the recipes from our dog day.
我接下来六个月的目标之一,就是尽可能地享受上海的各种户外活动。当然啦,我也想要让别人品尝到美味的素食,所以每次我们出去玩的时候,我都会准备一些美食供大家一起分享。所以呢今天也想给大家分享一下我们带着狗狗出去玩的这一天的美食食谱。

Today’s featured ingredient is quinoa. A few years ago, quinoa was really difficult to find in Shanghai. Now, you can find it many places, including our Taobao shop! If you don’t know much about this funky little seed of power, here are some fast facts:
今天的明星原料是——藜麦!几年前,在上海很难找到藜麦,但是现在呢,在很多地方都可以买到,包括我们的淘宝店哦!如果你不知道藜麦到底是个什么鬼,现在就来给你科普一下:

Quinoa is a great source of protein, boasting 8 grams of protein per one cup serving. It also contains 5 grams of fiber, as well as manganese, magnesium, phosphorus, good for your heart monosaturated fats, fatty acids, and other essential nutrients.
每一份藜麦有高达8克蛋白质和5克纤维素,以及各种各样的微量元素和必须营养物质。

One of the most amazing thing about this revered superfood is that it contains plant antioxidants called flavonoids, which show promising cancer and virus fighting powers.
这种超级食品最棒的一点是,它有一种植物抗氧化素,已被证明有潜在的抗癌抗病毒功效。

To me, the best thing about quinoa is how delicious and versatile it is. To prove it, today we see how to use it in a wrap AND cookies!!
对于我来讲,藜麦最棒的一点是它几乎可以被用到任何的食谱里去。为了证明这一点,今天会给大家一甜一咸两款食谱哦。

Greek Quinoa Wrap 希腊藜麦卷

I have been craving feta cheese lately. I am guessing it is due to the pregnancy. However, pregnant women are not supposed to eat feta cheese while pregnant due to the fact that they may contain a dangerous for baby bacteria called Listeria. So, I challenged myself to make a vegan version. The outcome? Delicious tofu that doesn’t taste anything like feta. To be continued. It was still very tasty though, as well as quick and easy to make.

我最近特别爱吃飞达芝士,可能跟怀孕了有关吧。但是呢怀孕期间其实不应该多吃飞达芝士,因为里面有对胎儿有害的细菌。所以我绝对挑战一下,做一个纯素的版本。结果呢?豆腐吃着一点都不像芝士,哈哈,但是这个方子还是很美味,做起来也很快。
 
Tofu Feta Recipe:
豆腐飞达芝士
 
Ingredients:
原料:
 
500 grams of small dried tofu squares
 ¼ cup water
½ cup red wine vinegar
1 tablespoon dried basil
½ teaspoon dried oregano
½ teaspoon pepper
½ teaspoon sea salt (you can add more if you like, but I try to keep salt content low)
 
500克豆腐干
1/4量杯水
1/2量杯红酒醋
1大勺 干罗勒
1/2小勺 干牛至叶
1/2小勺 胡椒粉
1/2小勺 海盐

Directions:
 做法

Mix all ingredients, except for tofu, in a shallow glass or plastic storage container
Add tofu and cover
Shake it like a polaroid picture
Refrigerate for at least one hour (I left mine over night. The longer, the better)

Quinoa Wrap Recipe:
藜麦卷
Makes 6 servings
可做六人份
 
Ingredients:
原料
 
6 wraps of your choice (I used laffa bread, but tortillas would work as well. You can also omit the wrap to make a delicious vegan and gluten free salad.)
2 cups of cooked quinoa
½ batch of the tofu feta
1 large cucumber, peeled, sliced and cut into quarters
1 and ½ cup cherry tomatoes, cut into quarters
Washed and cored lettuce of your choice
Juice of one lemon
Olive oil
sea salt and pepper
6个卷饼(随便用什么都可以,或者也可以直接做成沙拉)
2量杯 煮熟的藜麦
1/2 豆腐飞达芝士
1大根 黄瓜,去皮,切成小块
1又1/2量杯 樱桃番茄,切块
生菜
柠檬汁
橄榄油
海盐和黑胡椒
 
Directions:
做法
 
Mix quinoa, tofu feta, cucumber, tomatoes, and lemon juice in a large bowl
Add a splash of olive oil and sprinkle in salt and pepper, as much or as little as you prefer
Prepare to assemble wraps by placing one piece of lafa bread on top of wrapping paper. Add about 4 pieces of lettuce to the middle of the lafa bread.
Spread 2 scoops of quinoa mixture on top of the lettuce.
Starting from the side closest to you, roll wrap on top of the mixture, hold it, and bring the other side on top. Wrap tightly in paper.

These were so yummy! I ate two that day. Friends, husband and Little Sammy enjoyed them too!

Peanut Butter Quinoa No-Bake Cookies 花生酱藜麦免烤曲奇

There are some things in life that are meant to be together: yin and yang, Fu Yuanhui and water, me and Beyonce music in the kitchen, and of course, peanut butter and chocolate.
这个世界上有很多东西就是天生一对:阴和阳,我在做菜时放的碧昂斯的音乐,当然啦,还有花生酱和巧克力。
 
I was shocked when my Chinese friend exclaimed, “Why do foreigners like chocolate and peanut butter so much?!” In fact, I may have cried a little. I know sesame, and even peanut butter, are used in Chinese cooking, but the mixture of peanut butter and chocolate has yet to catch on in the mainstream.
我一个中国朋友问我为什么你们老外那么喜欢花生酱和巧克力的时候我都震惊了。我知道花生酱芝麻酱什么的经常被用在中式料理中,但是花生酱和巧克力的组合显然还没有流行起来。
 
I wanted something tasty to bring for desert on doggie day, but I did NOT want to bake because it is already 50 degrees in my kitchen, and I wanted something fast. So, here is a protein packed, healthy cookie recipe for you and your friends to enjoy! Maybe you can even use them to convince that peanut butter and chocolate IS a thing and it should be cherished, just like Sun Li and Deng Chao.
我想为我们的狗狗日带一些美味的甜品,但是我一点都不想开烤箱因为厨房里热得不得了,所以呢,越快越方便越好。所以今天为大家带来一款富含蛋白质的健康曲奇食谱。可能这个食谱会说服你花生酱和巧克力是天生一对?就像孙俪和邓超一样。
 
Ingredients:
原料:
 
2 and ½ cups cooked quinoa
½ cup peanut butter (I don’t recommend natural in this case as it might be too gooey, but you can try and add extra coconut flour to absorb the extra moisture. However, this might make them too dry.)
¼ cup honey (use maple syrup for a vegan version)
2 tablespoons coconut oil
2 teaspoons vanilla extract
1/8 teaspoon sea salt
½ cup coconut flour
1 bar chopped dairy free dark chocolate (I use these instead of chocolate chips, as they are easier and cheaper to get in China than vegan chocolate chips)
2又1/2杯 藜麦
1/2杯 花生酱(我不推荐用原味花生酱因为可能质地太稀,或者你可以试着加一点椰子粉让它变稠)
1/4杯 蜂蜜(纯素食者可以用枫糖浆)
2大勺 椰子油
2大勺 香草精
1/8小勺 海盐
1/2杯 椰子粉
1块 无奶黑巧克力(你也可以用巧克力豆,但是一整块的巧克力比较便宜)
 
Directions:
做法
On the stove over low heat, or in the microwave (which I recommend, because you don’t want it hot, but if your gas stove is like mine, it only has two settings-hot and HOT!!), melt peanut butter, honey, coconut oil, vanilla and salt. Mix all ingredients together well.
Add quinoa and coconut flour.
When mixture is cool enough, fold in chocolate chunks.
Form balls the size of rounded tablespoons and lightly press down to make cookie shapes. Place on waxed paper on a cookie sheet and refrigerate for about one hour to set.
用低温融化花生酱,蜂蜜,椰子油,香草精和盐,搅拌均匀。
加入藜麦和椰子粉
当混合物冷却下来之后,加入巧克力块

I made chocolate free bites for the doggies and they loved them! The people loved them too!

Eco Design Fair 2015

The Eco Design Fair is an amazing initiative organized by Sherry Poon and her team did an outstanding job once more. This year we were at the beautiful Kerry Center in Jing'an. The Fair was full of innovative products and delicious food.

We believe that "Health is wealth", and that's not just for our bodies, also the environment. The Eco Design Fair strives to gather everyone together help to educate us about how to live a healthy lifestyle without depriving ourselves of other things. Balance in self and balance in nature. Eating healthy foods, proper exercise, involving ourselves in different healthy recreational activities, a clean environment and recycling reusable materials, supporting organic and locally made products will truly make Shanghai life a green and healthy one. 

Serenity Seitan and Happy Buddha were so grateful to be part of such an amazing event once again. We prepared healthy vegan and vegetarian food that everyone enjoyed! We served up our cheesy quesadilla, BBQ sandwich made with our sweet American style BBQ sauce, veggie dogs with all the toppings, and chocolate mousse for dessert. The most exciting this was that we were able to announce our BIG news! We are opening Happy Buddha at wtf* Bikes in Jiashan Market very soon! Stay tuned for more information!

Eco Design Fair Fun!

We had an amazing time at this year's Eco Design Fair, which featured hundreds of different eco-friendly products that make living in Shanghai better. We were thankful to have the opportunity to feed the lovely fair guests Serenity Seitan dogs and burgers. We used the Italian Flavor seitan, with loads of delicious toppings including sauerkraut and onions, and everyone loved them! We also offered our soon to be launched burger, and were so happy to see people devouring them hungrily. 

There were so many inspirational products showcased at the fair, and we were so lucky to have been a part of it!

There has been a lot going on in the Serenity Seitan test kitchen. The burger is getting closer! One thing is certain, this stuff takes time and lots of experimentation. 

One thing we have experimented with in the burger is TVP, that's textured vegetable protein, or soy protein isolate. It gives the seitan burger a nice texture, and absorbs flavors really well. We thought we had found the cure for our burger blues. However, we wanted to make sure that what we gave customers was healthy, so we did our homework. What we found is that although TVP is a fairly good source of protein, and is often touted as a health food, it is highly processed. The processing steps include extracting the protein from the rest of the soybean components through a process called thermoplastic extrusion. So not natural, and not for Serenity Seitan customers. 

Next up on the testing block was bulgur wheat, or cracked wheat. A highly nutritious whole food. While the texture was nice, the taste wasn't as nice. We were left with the taste of bulgur wheat and not much else. Cross one more off the list. 

After more research and more testing, we arrived at the most recent prototype, which uses red kidney beans. Kidney beans are very nutritious, as they are high in fiber, molybdenum, folate, and magnesium. The good news is, it tastes pretty dang good too. The smoky flavor and seasonings really shine through. 

What we continue to be reminded of is that quality takes time, especially when you are not willing to compromise. We pledge to keep feeding you all natural, vegan seitan that you can feel good about eating.

Year of the Horse Brings Tons of Yum

Here in the Serenity Seitan kitchen, we have been busy this Chinese New Year making new and delicious recipes for you, our valued customers. While the fireworks explode night after night outside your bedroom window, our kitchen has been exploding with flavor as we work to bring you new ways to cook with our seitan. We are also excited about two new products that will be offered in the near future: Smoky Maple Seitan and Seitan Burgers. Two of my most favorite things are breakfast sandwiches and burgers. There are many delicious vegetarian sandwiches out there, but many leave my stomach growling for more. Seitan says "NO!" to hunger, and fills your mouth and appetite with goodness that lasts. It's been fun experimenting, and we can't wait to share the results with you.

Another piece of excitement is coming your way. Spread the Bagel will be offering two Serenity Seitan  Bagelwiches soon! They are the Buffalo Seitan Sandwich made with a tangy buffalo sauce, blue cheese, lettuce, and tomato, and the French Dip made with slow cooked seitan topped with Swiss cheese, and served with a vegetarian au jus sauce for dipping. Be on the lookout for this testy treat that you can order for delivery soon.
